Z’Menu Vo Hie, Dinner for Two at Victoria Jungfrau Grand Hotel & Spa – Interlaken

What if everything you find on your plate came not from miles away but from very close to where you live?

“Warum in die Ferne schweifen, wenn das Gute liegt so nah?”, once said Goethe. And it is true: eating seasonal and regional not only stimulates the local economy but helps the planet, too! We share this mindset and are therefore in total favour of Executive Chef Stefan Beer’s newest initiative: Z’Menu Vo Hie.

Bread, butter, honey, eggs, truffles, vegetables, meat and wine… all ingredients on the menu of La Terrasse at Victoria Jungfrau Grand Hotel & Spa Interlaken are sourced from local producers not further away than 40km. Good food and wine, so soll es sein! Gault & Millau attributed La Terrasse 16 points and crowned Stefan Beer “Chef of the Month” in October! Bravo!!

Recently I heard that Switzerland itself could produce enough food to feed the entire population if need be. With these thoughts in mind, I was very interested in attending the tasting of the new “Z’Menu Vo Hie” at the Victoria Jungfrau Grand Hotel. Why is it special? All ingredients come from a radius of 40 km from the hotel, not more.

Chef Stefan Beer researched the best ingredients in the area. Talk to locals, visit different farmers … I love the story of the dessert, where all the ingredients come from one single farm.

Each course is carefully combined with the appropriate regional wine.

The evening started with an aperitif in the herb garden of the hotel.

Even the truffles come from the area. Found in a secret place, and great in taste!

Each course was paired with a special wine.

Tartar of the Rubiger Salmon Trout, Garden Bavaroise & Autumn Tartine or Wedding of the Niederhorn Game, Cumberland Idea of the VICTORIA JUNGFRAU Pear

WinePairing: Pinot Gris 2017, Martin Hubacher, Johanniterkeller Twann, AOC Bielersee, Pinot Gris

Unterseener Freiland Egg, Bödeli Trüffel and “Rugen Gin & Tonic” Gartenholunder, Swiss Cristal Gin

Wine Pairing: Gipfelstürmer 2017, Rebbaugenossenschaft Spiez Spiez, AOC Thunersee VB 32-7, Riesling x Sylvaner

 

Main Course

Sigriswiler char, lime yoghurt garden herbs oil, fennel & Mattener potato twisters, paired with Chardonnay 2016, Anne-Claire Schott Twann, AOC Bielersee Chardonnay.

Delicacies from Bödeli Jungrind, Mattener Whiskey Herbal Liqueur Bödeli Spätzli & Walnuts from the VICTORIA-JUNGFRAU Garden Rychengartner Vegetables from Unterseen paired with Malbec 2016, Andreas Krebs Twann, AOC Bielersee Malbec.

 

 

Cheese Course

“Three AOP Alpchäs vo Feuzes Bärgli” of different ages accompanied by a Steffisburger Portwein 2011, Andreas Lanz Rebbau Steffisburg, AOC Thunersee Regent.

You too can, of course, enjoy this special meal at the Victoria Jungfrau Grand Hotel & Spa: from CHF 95 per person for a 3-course meal with wine.

…Originally converted from a private home into a Bed & Breakfast and then finally to the Grand Hotel, as it is known today …

As the beautiful 150th-anniversary book says:

“Even now it is easy to imagine Mark Twain or the King of Siam sitting on the terrace with its magnificent columns, enjoying the unobstructed view over the Höhematte on the three peaks of the Eiger, Mönch and Jungfrau.”

 

 

These pictures really only give a glimpse of this fantastic hotel with more than 5’000 square meters: wellness area (which I have to visit the next time!), 2 restaurants, 2 bars and 22 conference rooms!

A big thank you for the wonderful night – I can really recommend the Victoria Jungfrau Grand Hotel & Spa from the bottom of my heart!
