The 13th edition of S.Pellegrino Sapori Ticino can be summarized as such: 19 top gourmet events in 17 extraordinary locations in Switzerland, 366 Gault&Millau points and 22 Michelin Stars – no less – if you count all the accolades of the participating elite chefs from all for corners of the globe!

Swissdeluxe Hotels and S.Pellegrino Sapori Ticino have again partnered to bring us a gourmet festival of singular taste. Never before has there been such a wide range of events. New venues designed by world-class architects are hosting some of the festival dinners alongside several ‘special’ evenings during which the Top Chefs of the region and international starred chefs will prepare excellent food paired with magnificent wines.

Whether you are an experienced gourmet or a newbie, fine dining aficionados of all horizons will experience many a memorable soiree! There will be a ‘food-sharing’ type dinner valorizing freshwater flavors, three lounge evenings with an open bar and finger foods, as well as a food and wine stroll amidst the horticultural pride of Ticino. In other words, a programme that will tickle even the most demanding tastebuds… and that is sublimed by the stunning 5-star hotels hosting the events.

 

Switzerland is Superstar

In 2018, gourmets got to experience an eclectic pas de deux of Ticinese and World Cuisine, a culinary voyage to foreign lands, an invitation to explore exhilarating exotic flavors and exquisite gastronomic delights from around the world. Each and every individual experience conceived to form a harmonious ensemble. The theme this year is “back to the roots” and the aim to highlight the many culinary facets of Switzerland.

 

 

S.Pellegrino Sapori Ticino 2019 Swiss Chefs

 

 

Sapori Ticino is the synonym for festival of flavors. Held in multiple locations it is but one of a kind. It is also one of the most renowned gourmet festivals in Europe and has a long tradition.

This year’s edition is reminiscing the beginnings of Sapori Ticino and will dress its Grandes Tables following authentic Swiss traditions. This “homecoming” of an event that has always been an important messenger for Ticino as a beautiful tourist and gourmet destination, is a concept that is now extending to every part of the country.

To celebrate the vast spectrum of Swiss cuisine, S.Pellegrino Sapori Ticino partnered with Les Grandes Tables de Suisse, Switzerland’s most prestigious restaurant association.

Dany Stauffacher, Patron of the Festival, tells us that “We often hear that Switzerland, a country with four different languages and influences from many different cultures, does not have its own gastronomic identity. Having extensively visited Switzerland and its restaurants, I can assure you that our country is truly unique in its own way, not least in terms of cuisine: eclectic, experimental, but with deep-rooted traditions, rich in talent and passion. Swiss cuisine truly does deserve such an outstanding stage to reveal itself to the public in all its splendor. With S.Pellegrino Sapori Ticino we  are proud to be able to offer exactly that.”

The overture to the opus of gourmet experiences that await fine dining lovers this year were two gala dinners: on 8 April in Geneva at Hotel Four Seasons Les Bergues, and on 9 April in Zurich at Widder Hotel, two top restaurants of the Swiss Deluxe Hotel Group.

At Four Seasons Geneva, some of the best Chefs from Ticino take center stage: Lorenzo Albrici (Locanda Orico, Bellinzona, 16G & M – 1* M), Luca Bellanca (Metamorphosis, Lugano), Dario Ranza and Cristian Moreschi (Villa Principe Leopoldo, Lugano, 17G & M) and Domenico Ruberto (I due Sud, Hotel Splendide Royal, Lugano). Assisted by resident Chef Massimiliano Sena (15G & M – 1* M) they enchanted guests with flavorsome, sunkissed Mediterranean cuisine.

In Zurich, Chef Tino Roberto Staub (15G & M) welcomed in his kitchen at Widder Hotel guests chefs Andrea Bertarini (Ristorante Vicania, Vico Morcote – 14G & M), Mauro Grandi (THE VIEW Lugano – 14G & M), Egidio Iadonisi (Swiss Diamond Hotel, Vico Morcote – 14G & M) and Frank Oerthle (Ristorante Galleria Arté al Lago, Lugano, 16G & M – 1* M).

 

 

Then the culinary journey takes us back to Ticino, where a gourmet round trip to some of the most prestigious restaurants in the Italian part of Switzerland awaits. On 28 April, Didier de Courten (Le Terminus, Sierre – 19G & M – 2 **M) visits Chef Frank Oerthle at Ristorante Galleria Arté al Lago of the Grand Hotel Villa Castagnola in Lugano. Gourmets can look forward to creations that meet halfway between innovation and tradition.

The actual festival in Ticino will start on 29 April with a culinary highlight: the opening evening is dedicated to Swiss Deluxe Hotels and takes place at Hotel Splendide Royal in Lugano, where Domenico Ruberto will welcome guests Chefs  Salvatore Frequente (La Brezza, Hotel Eden Roc, Ascona – 16G & M – 1 * M), Marcus G. Lindner (Le Grand Bellevue, Gstaad – 18G & M) in his kitchen.

Franck Giovannini (Hôtel de Ville, Crissier – 19 & M – 3 *** M) is a guest at Lugano Ristorante Ciani and will surprise diners with his culinary creativity that is rooted in French cuisine. For his part, Chef and Author Peter Knogl (Cheval Blanc by Peter Knogl, Basel – 19G & M – 3 *** M), invites you to dinner at Castello del Sole in Ascona, where together with Resident Chef Mattias Roock (18G & M – 1 * M) he will present the German influences of his cuisine. Andreas Caminada is represented by his “Dauphin” Silvio Germann (IGNIV by Andreas Caminada, Bad Ragaz – 17G & M – 1 * M), who will delight guests at Seven Lugano The Restaurant, assisted by Resident Chef Claudio Bollini. Together they will let diners immerse in a  “Food Sharing Experience”.

In the kitchen of Luca Bassan in Fiore di Pietra, spectacularly set on the summit of Mount Generoso, Stéphane Décotterd (Le Pont de Brent, Brent – 18G & M – 2 **M) enchants guests with the flavors of his hometown: Montreux.

An absolute highlight in this year’s edition is the evening with Heiko Nieder, Gault & Millau Switzerland Chef of the Year 2019. With 19 Gault & Millau points and 2 Michelin stars under his belt, this gifted Chef, who is normally working his magic at The Restaurant at Hotel The Dolder Grand in Zurich, brings his amazing creations to the kitchen of Domenico Ruberto (15 Gault & Millau points) at Hotel Splendide Royal in Lugano.

This evening is an important premiere for S.Pellegrino Sapori Ticino because, for the first time, the festival associated with Gault & Millau Switzerland. A natural synergy of two partners that share the same passion for good food and perfect service.

Bernard and Guy Ravet (L’Ermitage des Ravet, Vufflens-le-Château – 19G & M – 1* M), practice their “team cuisine” at THE VIEW Lugano, in the kitchen of Mauro Grandi, the brigade at this occasion consisting of father and son.

Chef Martin Dalsass (Talvo by Dalsass, Champfèr – 18G & M – 1* M) celebrates his return to Ticino as a guest of the Swiss Diamond Hotel by Vico Morcote and Chef Egidio Iadonisi, who introduces a menu dedicated to the love of nature and the seasons.

Bernadette Lisibach (New Blumenau, Lömmenschwil – 16G & M – 1* M), Gault & Millau “Female Chef of the Year 2015” and recently awarded a Michelin star, will work together with Lorenzo Albrici (Locanda Orico – 16G & M – 1* M) at Villa Orselina’s panoramic restaurant in Locarno-Orselina. Invited by Resident Chef Riccardo Scamarcio (13G & M), they will prepare a four-hands dinner with many surprises.

Another highlight in this “Made in Switzerland” program is André Jaeger, Chairman of Les Grandes Tables de Suisse for over 20 years and savvy interpreter of Swiss gastronomic tradition. He will be cooking alongside Chef Dario Ranza in Cristian Moreschi’s kitchen at Villa Principe Leopoldo in Lugano.

Enrico Bartolini, head of the homonymous restaurant in Milan’s MUDEC, will whisk us away on a culinary escape to Italy and its Mediterranean delights: his host is Davide Asietti at BLU Restaurant & Lounge in Locarno.

An absolute novelty this year is the evening Salute con Sapore in collaboration with the Ticino Hospital Association EOC (Ente Ospedaliero Cantonale): 5 chefs from Ticino are inviting festival dwellers to taste their interpretation of healthy gourmet cuisine. Salute con Sapore is an ongoing project that aims to bring healthy food to all homes in Ticino.

S.Pellegrino Sapori Ticino concludes with a gala on 16 June at Hotel Splendide Royal in Lugano. The evening that will put the cherry on the cake of this thirteenth edition will feature some of Ticino’s finest chefs. Together, they will concoct an unforgettable experience.
